Certified Coffee Training and Workshop Since the third wave of coffee is a fairly new term, there is not much that can be described as history. This term was introduced following an article by Trish Rothgeb (formerly Trish Skeie) of Wrecking Ball Coffee Roasters in 2002. In this article published in The Flamekeeper, which published important publications for coffee roasters, Rothgeb described the three coffee streams as “waves.. After that, the words that would represent the new trend emerged as “third wave”.
